  • 1.5 pounds boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon paprika
  • salt and pepper to taste
  • fresh chopped parsley optional, for garnish
  • lemon wedges optional, for serving

Instructions
 

  • Season the chicken pieces with salt, pepper, paprika, and Italian seasoning.
  • In a large skillet over medium-high heat, heat the olive oil and 1 tablespoon of butter.
  • Add the chicken pieces and cook, stirring occasionally, until golden and cooked through (about 5–7 minutes).
  • Push the chicken to one side of the skillet and add the remaining butter and minced garlic.
  • Once fragrant, add the asparagus and stir-fry for 3–4 minutes until tender-crisp.
  • Toss the chicken and asparagus together to coat everything in the garlic butter sauce.
  • Remove from heat, garnish with chopped parsley and serve with lemon wedges if desired.

Notes

Tip: Don’t overcrowd the pan to ensure the chicken gets a good sear.
Variation: Swap asparagus with green beans or broccoli if desired.
Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days.
