Equipment

  • Vegetable Peeler
  • 2 Glass Jars with Lids
  • Measuring Cups
  • Small Saucepan
  • Whisk
  • Mesh Strainer
  • Mixing Bowl
  • Storage Bottles or Jars

Ingredients

  • 10 lemons
  • 770 ml vodka 80 to 100 proof
  • 1-2 cups sugar
  • 1-2 cups water

Instructions

  • Wash the lemons well and peel the yellow part off using a vegetable peeler.
  • Divide the lemon peels evenly between 2 jars.
  • Pour the vodka over the peels, dividing evenly between the jars. Seal the jars tightly.
  • Let the jars sit at room temperature, out of direct sunlight, for at least 4 days and up to a month, shaking gently every other day.
  • After infusing, combine 1 cup sugar and 1 cup water in a small saucepan over medium-low heat, whisking constantly until sugar dissolves. Cool the syrup.
  • Set a mesh strainer over a bowl and strain the vodka mixture to remove the peels.
  • Whisk the simple syrup into the strained vodka. Taste and add additional syrup if desired, to sweeten.
  • Transfer the limoncello to storage bottles or jars. Chill before serving. Enjoy!

Notes

The longer the lemon peels infuse, the stronger the flavor. Add more simple syrup for a sweeter taste or if the alcohol is too strong.
