Ingredients
  

  • 8 cups fresh peaches peeled and thinly sliced
  • 1/2 cup granulated sugar
  • 1/2 + 2 tbsp all-purpose flour divided
  • 1 tbsp cornstarch
  • 2 tsp ground cinnamon divided
  • 1/4 tsp salt
  • 3/4 cup light brown sugar packed
  • 1/2 cup salted butter room temperature
  • 1 3/4 cups old-fashioned oats

Instructions
 

  • Preheat oven to 400°F (200°C). Butter a 9×9 baking pan and set aside.
  • In a large bowl, mix peaches, granulated sugar, 2 tbsp flour, cornstarch, 1 tsp cinnamon, and salt until combined. Pour into the prepared pan.
  • In the same bowl, cream together brown sugar, remaining ½ cup flour, butter, and 1 tsp cinnamon until clumpy. Stir in oats to form coarse mixture.
  • Crumble oat mixture evenly over the peaches. Bake for 20–25 minutes until lightly golden around the edges.
  • Remove from oven and let rest for 10 minutes before serving. Best served warm with vanilla ice cream.

Notes

Use ripe but firm peaches for the best texture. Store leftovers in the fridge for up to 4 days. To make gluten-free, use a GF flour blend and adjust cornstarch as noted.
