  • 2 pounds Yukon Gold potatoes peeled and cut into chunks
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 2 tablespoons apple cider vinegar
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 stalks celery diced
  • 0.5 cup red onion finely chopped
  • 3 hard-boiled eggs chopped
  • 0.25 cup sweet pickle relish
  • paprika for garnish (optional)

Instructions
 

  • Boil potatoes in salted water until tender, about 10-12 minutes. Drain and cool slightly.
  • In a large bowl, mix mayonnaise, mustard, vinegar, salt, and pepper.
  • Add potatoes, celery, onion, eggs, and relish to the bowl. Gently toss to coat.
  • Chill for at least 1 hour before serving. Garnish with paprika if desired.

Notes

You can substitute Greek yogurt for half the mayo for a lighter version. Tastes even better when made a day ahead. Adjust mustard and relish to taste for more or less tang.
